1tbsp Coriander
1tbsp Sour Cream
50gms Grated Cheese
1tsp Taco Seasoning
1tsp Roasted Cumin Powder
Salt To Taste

In a Medium Kadhai, add 2tbsp oil.

Place the trimmed chicken thighs, skin side down. Season the chicken with Salt, Black Pepper, Roasted Cumin Powder & Taco Seasoning.

Sear for 2 minutes each side and add seasoning after flipping to the other side.

Take off the heat once a nice golden brown color is achieved.

In the same pan, add chopped onions & carrots and saute for 2 minutes.

Next, add the boiled corn and chopped mushroom and saute for 2-3 minutes.

Add seasonings, followed by a cup of pre-soaked rice.

Pour enough water to cover the rice completely. Put the lid on and cook for 3-4 minutes on medium-high heat.

Now, place the chicken thighs back in the pan and cook for 5-6 minutes more till the rice is almost cooked.

Lastly, cover the surface with grated cheese and cook for a final 2 minutes until the cheese melts and all excess moisture evaporates.

Plate with a dollop of sour cream, some salsa and a lemon wedge.
