One-Pot Chicken and Rice is a popular dish in many Balkan countries, known for its simplicity and comforting flavors.

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Season the chicken thighs with salt, pepper, paprika, thyme, and oregano.
  3. 3Add the chicken to the pot and brown on both sides, about 5-7 minutes. Remove and set aside.
  4. 4In the same pot, add chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  5. 5Add the rice to the pot and stir for 1-2 minutes until slightly toasted.
  6. 6Pour in the chicken broth and bring to a boil.
  7. 7Return the chicken to the pot, reduce heat to low, cover, and simmer for 20 minutes.
  8. 8After 20 minutes, add the frozen peas, stir gently, and cover again. Cook for an additional 5 minutes.
  9. 9Remove from heat and let it sit covered for 5 minutes before serving.

Instructions

  1. 1Cut the pork ribs into individual pieces if not already done.
  2. 2In a large bowl, mix together the flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  3. 3Dredge each piece of pork rib in the flour mixture, ensuring they are well coated.
  4. 4Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
  5. 5Carefully add the coated pork ribs to the hot oil in batches, avoiding overcrowding the pan.
  6. 6Fry the ribs for about 5-7 minutes on each side, or until they are golden brown and cooked through.
  7. 7Use a slotted spoon to remove the ribs from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. 8Repeat the frying process with the remaining ribs.
  9. 9Once all the ribs are fried, garnish with chopped parsley before serving.
  10. 10Serve hot with your choice of dipping sauce.
