Preheat the oven to 180°C (350°F).
Grease a loaf pan (approximately 20x10cm) and line the base with parchment paper, ensuring to leave some paper hanging over the sides to lift the loaf once cooled.
In a large bowl, whisk together the eggs, double cream, vegetable oil, lemon juice, and vanilla.
In a small bowl, combine the sugar and lemon zest. Rub the sugar with the lemon zest to infuse the aroma and enhance the natural lemon essence. Add to the wet ingredients.
Fold in the grated zucchini, then incorporate the flour and salt gently.
Pour the mixture into the prepared loaf pan. Bake for 40 minutes or until a toothpick inserted comes out clean.
While the loaf cools, in a small bowl, mix the powdered sugar and lemon juice, adding it one tablespoon at a time to achieve the desired consistency.
Once the loaf is at room temperature, pour the glaze over the top. Optionally, decorate with additional lemon zest.
