Originating from Greece, Gyro is a beloved street food that reflects the country's rich culinary traditions. Traditionally made with meat cooked on a vertical rotisserie, Gyro is often served with fresh vegetables and a creamy tzatziki sauce, encapsulated in warm pita bread. This dish is a staple in Greek cuisine and has been embraced worldwide, with variations appearing in many countries, showcasing local flavors and ingredients.

Chop onions and let them cool off with garlic.
In a mixing bowl, combine the cooled onions and garlic with the spices: oregano, cumin, marjoram, rosemary, thyme, black pepper, coriander, and sea salt.
Wash hands and mix the ingredients by hand until well combined.
Peel and grate one cucumber, then place it on paper towels to soak up excess water.
Squeeze out the water from the grated cucumber until you have about two-thirds of a cup.
To the cucumber, add half a teaspoon of garlic and a quarter to half teaspoon of prepared mustard.
Add 1.5 cups of a mixture of Greek yogurt and sour cream to the cucumber mixture.
Chop fresh dill and add it to the mixture, then mix everything together until combined.
Taste the sauce and add a pinch of salt if needed, then refrigerate for about 30-45 minutes to let the flavors meld.
Shape the meat mixture into long, hot dog-shaped patties for grilling.
Prepare the grill with hickory logs for indirect heat and add fresh coals on top.
Place the meat patties on the indirect heat side of the grill and cover with the lid, vent hole open, cooking for about 30 minutes.
After 20 minutes, check the meat for a nice red color from the smoking process.
Move the patties over to the direct heat side of the grill to give them a little texture and char.
Once cooked, let the patties cool slightly before carving them into pieces, similar to cutting flank steak.
