Place the potatoes in the oven and bake for 50 minutes.

After baking, cut the potatoes open to let the steam escape.

Scoop out the insides of the potatoes into a bowl, leaving the skins intact to create pockets.

Mash the potato insides with a generous amount of butter and 1 cup of milk until well mixed.

Add sliced smoked sausage and smoked turkey to the mashed potatoes.

Incorporate sweet corn into the mixture and mix well.

Add mozzarella cheese and processed craft cheddar cheese to the mixture and stir until combined.

Fill the potato skins with the cheesy potato mixture evenly.

Increase the oven temperature to 200 degrees.

Top the filled potatoes with extra mozzarella or cheddar cheese and bake for an additional 10 minutes until the cheese is melted and bubbly.

Optionally, add mayonnaise and cream cheese on top before serving.

Optionally, sprinkle with red pepper or coriander powder, or serve with ketchup or hot sauce.
