Cheesy Mashed Potatoes

2 pounds potatoes
1 cup sharp cheddar cheese
1/2 cup half and half cream or milk
1/4 cup butter
1/2 tsp seasoned salt
1/4 tsp pepper
1/2 tsp regular salt

Skin the potatoes, checking for any rotting spots.

Cut the potatoes into medium to small cubes.

Place the cubed potatoes into a microwavable safe Pyrex dish and fill it with water.

Microwave the potatoes for around 20 minutes, using a potato setting if available, or in two 10-minute intervals.

While the potatoes are cooking, shred about 1 cup and 3/4 of sharp cheddar cheese, adjusting the amount based on preference.

Once the potatoes are done, check for tenderness by inserting a knife.

Pour the cooked potatoes into a bowl and add half and half cream or milk and butter.

Mash the potatoes using a potato masher until creamy, or use a handheld mixer if available.
