Cheesy Mashed Potatoes

3 lbs Yukon Gold potatoes
2 medium cloves of garlic
1/2 cup room temperature butter
sour cream
salt
pepper
fresh parsley
cheddar cheese

Boil approximately 3 lbs of Yukon Gold potatoes in a couple of inches of water until fork tender (about 15-20 minutes).

Smash 2 cloves of garlic with a knife and add to the potatoes.

Drain the potatoes and return them to the stove to dry out excess moisture.

Add 1/2 cup of room temperature butter to the hot potatoes and let it melt.

Mix in sour cream, salt, and pepper to taste.

Transfer the potatoes to a counter and add fresh parsley for garnish.

Mash the potatoes to desired consistency (chunky or creamy).

Incorporate warm cream into the potatoes as needed.

Fold in cheddar cheese while the potatoes are still warm.
