This dish is especially cherished in the fall when both ingredients are at their peak. Variations exist in different regions, with some adding spices or even nuts for extra texture and flavor.

Chop 4 slices of thick cut bacon into 1/2 inch to 1 inch cubes.
Fry the bacon in a skillet until crispy and golden.
Add 1/4 cup of chopped green onions to the skillet with the bacon and stir for about 1 minute.
Remove the bacon and onions from the skillet and set aside.
Cut half of a large cabbage into 1 inch cubes, totaling approximately 8 cups, and add to a bowl.
Bring 1 and 1/4 cup of water to a full boil in the skillet.
Add the cabbage to the boiling water and stir occasionally until tender, about 5-6 minutes.
Cut 2 Pink Lady apples into 1/2 inch to 1 inch pieces.
Add the butter to the skillet with the cabbage once tender and allow it to melt.
Add black pepper and about 3/4 teaspoon of salt to the skillet.
Add 1/4 teaspoon of nutmeg to the mixture.
Add the apples to the skillet and cook until they are a little tender, about 2 minutes.
Return the bacon and onions to the skillet with the apples and cabbage.
Add more black pepper to taste.
Cover the skillet and let it cook for about 2 minutes.
Garnish with freshly chopped parsley before serving.
