Slice the red cabbage thinly, removing the core.
Peel and core the apples, then thinly slice them, not too thin.
Combine the sliced cabbage and apples in a bowl and stir them together.
Add about 1 tablespoon of apple cider vinegar to the mixture.
Drizzle in a couple of tablespoons of olive oil.
Sprinkle in some salt and black pepper to taste.
Add about 1 tablespoon of brown sugar to the mixture.
Incorporate about 1 teaspoon of mixed spice (or pumpkin spice, or a mix of cinnamon and nutmeg).
Mix everything together well, using gloves if preferred.
Prepare a baking tray lined with parchment paper.
Spread the cabbage and apple mixture onto the tray, ensuring it's evenly distributed.
Bake in the oven at 400°F (200°C) for about 25 minutes, stirring halfway through.
After 25 minutes, check the mixture; if it looks good, turn it over.
If needed, return it to the oven for another 15 minutes.
Crush walnuts by hand and sprinkle them over the mixture about 5-6 minutes before the end of cooking to warm them through.
Stir the mixture again before serving hot.
