Preheat the oven to 180°C (350°F).
Wash and cut the tops off the bell peppers, removing seeds and membranes.
In a bowl, mix ricotta cheese, chopped parsley, egg, minced garlic, salt, black pepper, and oregano until well combined.
Stuff each bell pepper with the ricotta mixture, pressing down gently to pack it in.
Drizzle olive oil over the stuffed peppers and sprinkle with bread crumbs.
Place the peppers upright in a baking dish and add a splash of water to the bottom of the dish.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil, sprinkle cheese on top of the peppers, and bake for an additional 10-15 minutes until golden.
Let cool for a few minutes before serving.
