Start by making the ice cream since it takes the longest to set.
Pour equal parts coconut milk and coconut cream into a larger jar, filling it to the brim.
Add a pinch of salt (or 1/4 teaspoon) and some vanilla extract.
Add honey as a natural sweetener, using a mini spatula to scrape it out.
Shake the jar tightly for about five minutes or use a frother to mix for five minutes.
Transfer the mixture into a plastic container to avoid explosions while freezing.
Put the lid on and freeze for about 8 to 10 hours or overnight.
Toast hazelnuts in an oven at 350°F for about 8 to 10 minutes, checking halfway through.
Let the hazelnuts cool, then place them in a clean kitchen towel to remove the skins by rubbing them together.
Pulse the hazelnuts in a food processor for about 5 to 7 minutes until they reach a creamy consistency, scraping down the sides as needed.
Add a half tablespoon of vanilla, cocoa powder, and sugar to the hazelnut mixture and blend until combined.
On medium-low heat, melt coconut oil and maple syrup in a saucepan, stirring to combine.
Add the hazelnut butter to the melted mixture and stir until combined.
Add 1 cup of oats and stir until fully coated with the wet ingredients.
Add shredded coconut and mix until combined, then turn off the heat.
Scoop the mixture using an ice cream scooper onto a surface, flattening them slightly to form cookies.
Continue scooping until all the mixture is used up.
