Remove the leaves of mustard grass one by one, using gloves if desired due to thin spines.

Rinse the mustard grass leaves two or three times and wash them well.

Soak the washed mustard grass leaves in vinegar water for 10 minutes.

Add a few pinches of mustard leaves to boiling water and keep them in hot water for about 1 minute before removing them.

Transfer the softened mustard leaves to normal tap water to maintain their green color.

Repeat the process for the remaining mustard leaves, adding them little by little to the hot water and then to cold water.

Chop a small onion and add some salt and juice of half a lemon, mixing well and letting it sit for a few minutes to reduce the bitterness of the onion.

Take the mustard herbs from the cold water and drain the excess water, squeezing them if necessary.

Coarsely chop the mustard herbs and place them on a salad plate, separating the leaves as needed.

Add the prepared onion over the mustard herbs.

Slice 2-3 cherry tomatoes and add them to the salad plate.
