Mix bread flour and active yeast in a large bowl.
Add ice water and honey to the flour mixture and mix on medium speed for 2 minutes.
Add olive oil and mix until the dough releases from the sides of the bowl.
Let the dough rest for 10-20 minutes, covered.
Add salt to the dough and mix until incorporated.
Divide the dough into 8 pieces and shape each into a ball.
Cover the balls with plastic wrap and refrigerate for about 12 hours for proofing.
Preheat the oven to 450°F or 500°F with a pizza stone inside for at least 1 hour.
Roll each dough ball into an oval shape.
Bake each pita for 2-3 minutes until puffed.
