Njahi & Guacamole wrap

1 cup njahi (black beans)
1 ripe avocado
1 medium tomato, diced
1/4 cup red onion, finely chopped
1 lime, juiced
1/4 tsp salt
1/4 tsp black pepper
4 large whole wheat tortillas
1/2 cup fresh cilantro, chopped

Rinse the njahi (black beans) under cold water and soak them overnight in water.

Drain the soaked njahi and cook them in a pot with fresh water for about 1-1.5 hours until tender. Drain and set aside.

In a bowl, mash the ripe avocado with a fork until smooth.

Add the diced tomato, red onion, lime juice, salt, and black pepper to the mashed avocado. Mix well to combine.

Lay out the whole wheat tortillas on a flat surface.

Spread a generous amount of the guacamole mixture onto each tortilla.

Add a portion of the cooked njahi on top of the guacamole.

Sprinkle chopped cilantro over the njahi.

Fold the sides of the tortilla inwards and then roll it up tightly from the bottom to form a wrap.

Cut the wraps in half and serve immediately.
