Welcome to the kitchen with Dinah, today we're making molten lava cakes.

For this recipe, we need 8 ounces of chocolate. You can use 6 ounces of dark chocolate for a darker flavor or semi-sweet for a milder flavor. Today, we're using half and half.

Break the chocolate into pieces and place it in a large microwave-safe bowl.

Cut 10 tablespoons of butter (1 stick plus 2 tablespoons) into pieces and add it to the chocolate.

Microwave the chocolate and butter for 2 minutes, stirring every 30 seconds until melted and velvety smooth. It took about 1 minute and 10 seconds in total for me.

Add 1/2 cup of all-purpose flour and 1 1/2 cups of powdered sugar to the melted chocolate mixture. Mix well until combined.

Next, add 3 whole eggs and 3 egg yolks to the mixture. Mix until well combined.

Add about 1 teaspoon of vanilla extract and mix again until everything is incorporated.

Preheat the oven to 400°F (200°C).

Grease 6 seven-ounce ramekins with butter, making sure to go up to the first lip of the ramekin. Do not flour them.

Evenly distribute the batter into the 6 ramekins, filling them as evenly as possible.

Place the ramekins on a large cookie sheet and bake in the preheated oven for 14 minutes.

Check the cakes after 14 minutes. If they aren't puffed enough, give them an additional 30 seconds to 1 minute, but be careful not to overcook them.

Once baked, let them cool for a moment before inverting onto plates. Use a paring knife to loosen the edges before flipping them over.

Serve with ice cream, breaking open the cake to let the molten center flow out.
