Chop the chocolate into fine pieces to make melting easier.
Place about 2/3 of the chopped chocolate into a bowl and leave 1/3 on the counter for tempering later.
Microwave the chocolate in 30 to 35 second increments, stirring in between each increment until completely melted.
Once melted, add the reserved chopped chocolate to the bowl to help temper the chocolate and achieve a smooth finish.
Optionally, add a little bit of espresso powder to the melted chocolate to deepen the flavor.
Pour the melted chocolate into small squeeze bottles for easy drizzling.
Prepare a parchment-lined baking sheet and lay out the candy sticks.
Drizzle the melted chocolate in a round shape on the parchment, making it a bit thick to ensure it sticks to the candy stick.
Sprinkle toppings such as salted chopped nuts, finely ground pistachios, and dried fruits onto the warm chocolate before it hardens.
Allow the chocolate suckers to harden at room temperature, avoiding the fridge to prevent white spots from forming.
Once hardened, peel the chocolate suckers off the parchment paper and enjoy.
