Peel the green mangoes completely.
Cut the mangoes into thin strips or cubes, as preferred.
Place the cut mangoes into a jar.
In a skillet, heat 2-3 tablespoons of olive oil.
Slice 3 cloves of garlic thinly and add to the skillet with the heated oil.
Cook the garlic for about 1 minute until fragrant, then turn off the heat.
In a bowl, combine 200 ml of water and 200 ml of vinegar.
Turn the heat back on and bring the vinegar and water mixture to a boil.
Squeeze the juice of 1 lime into the boiling mixture.
Once boiling, turn off the heat and let it sit for 2 minutes.
Add 2 teaspoons of black pepper, 1 teaspoon of oregano, and 3 teaspoons of salt to the mixture, and stir well.
Pour the mixture over the mangoes in the jar, ensuring they are fully covered.
Drizzle a little olive oil on top of the mangoes in the jar.
Seal the jar tightly and refrigerate for 2 days to allow the flavors to meld.
