Switch to a spoon and fold in the cooled apples into the batter, using about 3/4 of the apple mixture.
Spray muffin tins with non-stick cooking spray to prevent sticking.
Spoon the batter into the muffin tins, spreading it evenly.
Top each muffin with the crumble topping, pressing it gently to stick.
Preheat the oven to 400°F (204°C) and bake for 2 minutes, then reduce the temperature to 350°F (175°C) and continue baking until done.
Allow muffins to cool before serving.
