Peel the cucumbers lightly, leaving some green skin.
Cut the cucumbers in half and scoop out the seeds to remove excess moisture.
Grate the cucumbers using a box grater until they are super fine.
Chop any loose big pieces of cucumber.
Drain the grated cucumber using several layers of paper towel or a clean dish towel.
In a bowl, combine the drained cucumber, 1 cup of thick whole milk Greek yogurt, minced garlic, fresh dill, juice of half a lemon, a little olive oil, salt, and pepper. Mix well and refrigerate.
For the chicken marinade, combine whole milk Greek yogurt, paprika, oregano, cumin, crushed red pepper, crushed coriander seeds, kosher salt, black pepper, cinnamon, minced garlic, a couple tablespoons of lemon juice, a splash of red wine vinegar, and extra virgin olive oil in a bowl.
Marinate the boneless skinless chicken thighs in the marinade for at least 2-4 hours, preferably overnight.
Cut a large onion in half horizontally and place it on a rimmed lined baking sheet as the base for the chicken tower.
Insert two wooden skewers into the center of the onion halves for stability.
Thread the marinated chicken thighs onto the skewers, wiping off excess marinade as needed.
Bake the chicken tower at 375 degrees Fahrenheit for about 1 hour, tinting with foil halfway through if it browns too quickly.
Once cooked, slice the chicken off the skewers to serve.
Spread tzatziki sauce over warm pita bread.
Add toppings such as romaine lettuce, red onion, and tomato to the pita with the sliced chicken.
