Score the beef brisket about 1.5 cm deep in a chessboard pattern.
Cover the brisket liberally with salt and pepper.
Rub in 1 tablespoon of ground cumin and 1 tablespoon of smoked paprika into the brisket.
Add 1 tablespoon of oregano and rub it into the brisket.
Heat olive oil in a pan over medium heat and add the brisket to toast the spices and crisp the outside.
Add any leftover spices from the brisket to the pot along with 2 tins of canned tomatoes and 1 tin of beef stock.
Chop up 2 red peppers and 2 yellow peppers and add them to the pot along with 1 stick of cinnamon and a couple of bay leaves.
Move the brisket from the pan to the pot and slice up 2 onions, 4 cloves of garlic, and 2-4 chillies, then add them to the pan with the brisket juices.
Once the onions are softened, add this mixture to the pot and push the beef down into the liquid.
Bring to a boil, then cover with a lid, turn the heat down to low, and let it simmer for about 4 to 4.5 hours.
Wrap the cooked chilli con carne in cling film and then cover it with foil for insulation.
Use tea towels or a picnic blanket to keep the chilli warm while traveling.
To freshen up the chilli after traveling, add a splash of vinegar and a touch of salt, then mix in fresh coriander.
For guacamole, mash ripe avocados in your hands, add half a grated red onion, and squeeze in lime juice.
Season the guacamole with salt and pepper, then add ripe tomatoes and grated chilli to taste.
Serve the chilli con carne with handmade guacamole, lettuce leaves, yogurt, and soft tortillas.
