Cultural Context

Chilli con Carne has its roots in the American Southwest, influenced by Mexican cuisine and cowboy culture. Traditionally, it was a hearty dish made with beef, chilies, and spices, often enjoyed by ranchers and travelers. Today, it is a beloved comfort food in many households, with countless variations worldwide, from mild to spicy, and often served with rice or cornbread.

1

Prepare the vegetables: remove the stem from the red capsicum, cut it in half, slice into strips, and then dice.

2

Cut the brown onion in half, remove the stem ends, peel, then cut horizontally and vertically to dice.

3

Place a large pan over medium-low heat and lightly oil it.

4

Add the diced capsicum and onion to the pan; sauté for 4 to 6 minutes until the onion is slightly translucent and the capsicum softens. Remove from the pan and set aside.

5

In the same pan, set over high heat, lightly oil and add 750 grams of lean beef mince.

6

Leave the mince for 1 to 2 minutes without moving to allow it to caramelize and develop a brown crust.

7

Flip the mince and repeat on the other side for another 1 to 2 minutes.

8

Cook the mince until the juices evaporate and it begins rendering in its own fat, about 3 to 4 minutes, until the sound changes from bubbling to sizzling.

9

Add 1 tablespoon of tomato paste, 2 teaspoons of paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 0.25 teaspoon of chili powder (or 0.5 to 0.75 teaspoon for more spice). Stir to combine and lightly fry the spices in the tomato paste for 20 to 30 seconds.

10

Add 800 grams of canned tomatoes, 2 beef stock cubes, and 175 milliliters of water to the pan.

11

Add 1 tablespoon of soy sauce for extra flavor.

12

Return the sautéed capsicum and onion to the pot and bring the mixture to a boil.

13

Reduce the heat to medium-low and leave the lid slightly open to allow steam to escape. Cook for 10 to 12 minutes until it thickens.

14

While the chili con carne is reducing, rinse 250 grams of white rice three times to remove excess starch and cook according to package instructions.

15

Add 410 grams of rinsed kidney beans to the pot about 3 to 4 minutes before finishing the chili con carne to avoid overcooking them.

16

Check the consistency of the chili con carne; it should be thick but not fully reduced. Adjust cooking time if necessary.

17

Plate the dish by dividing the cooked rice into five containers, followed by the chili con carne, and finish with 10 grams of light sour cream.
