Dark chocolate chips offer a richer flavor.
Start by making the batter for the peanut butter cookies using an electric stand mixer with a paddle attachment or an electric hand mixer.
Mix 1/2 cup of room temperature unsalted butter until creamy and smooth.
Add 3/4 cup of peanut butter (smooth or crunchy) and beat it into the butter.
Add 1/3 cup of light brown sugar and 1/3 cup of granulated white sugar, then beat until the mixture is light and fluffy.
Scrape down the sides of the bowl to ensure everything is mixed well.
Add 1 teaspoon of pure vanilla extract, 1 large egg (room temperature), and 2 tablespoons of milk, then beat until combined.
In a separate bowl, whisk together 1 and 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of kosher salt.
Gradually add the dry ingredients to the wet ingredients, mixing slowly to avoid flour flying everywhere.
Once combined, the batter will be quite soft, so transfer it to a bowl, cover with plastic wrap, and chill in the fridge for about 1 hour until firm enough to roll into balls.
Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper or grease them.
Roll the chilled batter into 1-inch balls (about 2 and 1/2 cm) and space them a couple of inches apart on the baking sheets.
Optionally, roll the balls in granulated white sugar for a crunchy exterior before placing them on the baking sheets.
Bake the cookies for about 8 to 10 minutes until lightly browned.
While the cookies are baking, unwrap the Hershey's Kisses (or Hugs) for topping.
Once the cookies are done, press a Hershey's Kiss into the center of each cookie gently until the cookie starts to crack.
Allow the cookies to cool slightly before storing them.
