Let the dough rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 425°F (220°C) and prepare a baking sheet.
Punch down the dough and divide it into equal pieces.
Shape each piece into a bagel by forming a ring with your fingers.
Boil water in a large pot and add malt syrup.
Boil each bagel for about 30 seconds on each side, then remove and drain.
Brush the bagels with egg wash and sprinkle with sesame or poppy seeds.
Place the bagels on the baking sheet and bake for 15-20 minutes until golden brown.
Cool on a wire rack before serving.
