Start by selecting cuts of meat, using 100% pork, specifically shoulder and pork belly for fat.
Prepare a mixture of seasonings with black pepper, nutmeg, salt, and a bit of garlic.
Chop the garlic finely and mix it with some of the salt to create a paste.
Add cold water to the mixture, not exceeding 20% of the weight of the meat being processed.
Mix the dry ingredients with the water to create an emulsion.
Process the meat and fat mixture in a food processor, adding the liquid gradually to avoid overheating.
Once the sausage mixture is ready, set it aside and prepare the bread dough.
For the bread, combine 500 grams of flour with 30 grams of yeast and 100 centimeters cubed of water to hydrate the yeast.
Add 4 eggs, 1/2 tablespoon of salt, 2 tablespoons of powdered milk, and 2 tablespoons of sugar to the mixture.
Mix all the ingredients together until well combined.
