1 Large Onion
1 Large Tomato
2 tbs Tomato Paste
Salt To Taste
1/2 tsp All Spice Powder
1/2 tsp Coriander Powder
3/4 tsp Red Chili Powder
1/4 tsp Cinnamon Powder
1/4 tsp Turmeric
1/2 tsp Cumin Seeds
Juice Of 1 Lemon
Handful Of Greens (I've Used Dill)
Olive Oil For Serving (Optional)

Boil the whole chicken in 6 cups of water with salt to taste until fully cooked.

Remove the chicken and set aside, reserving the broth.

In the same broth, add 2 cups of rice and cook until the rice is tender.

In a separate pan, sauté the chopped onion until translucent, then add the chopped tomato and tomato paste, cooking until softened.

Add the spices (all spice powder, coriander powder, red chili powder, cinnamon powder, turmeric, cumin seeds) to the onion and tomato mixture, stirring well.

Combine the cooked rice with the chicken broth and the onion-tomato-spice mixture, stirring to combine.

Mash the rice mixture to achieve a porridge-like consistency.

Serve the dish topped with pieces of the cooked chicken, a squeeze of lemon juice, and a drizzle of olive oil, garnished with dill.
