Juice fresh lemons into a jug using a juicer.

Make honey syrup by combining 150 ml of honey with 50 ml of hot water, stirring until the honey is loosened.

Add 25 ml of lemon juice per drink to the shaker.

Add 15 ml of honey syrup per drink to the shaker.

Add 45 ml of Beefeater London Dry Gin per drink to the shaker.

Shake the mixture until well chilled.

Strain the mixture into a chilled glass.

For the vodka version, substitute gin with 45 ml of vodka, 50 ml of lemon juice, and 30 ml of honey syrup, then shake and garnish with orange zest.
