Homemade Bagels

Cultural Context

Bagels are a traditional Jewish bread that became popular in the United States, particularly in New York City. They are often enjoyed for breakfast or as a snack, typically topped with cream cheese, lox, or various spreads. The process of boiling before baking gives bagels their distinctive chewy texture.

2 cups all-purpose flour
2 teaspoons baking powder
pinch of salt
Greek yogurt (adjustable amount, starting with 2 heaping tablespoons)
1 egg
1 teaspoon milk
sesame seeds
black garlic salt
additional salt (for topping)

bread flour

🥗Healthier: whole wheat flour

💰Cheaper: all-purpose flour

Whole wheat flour is more nutritious, while all-purpose flour is budget-friendly.

malt syrup

💰Cheaper: honey

Honey can be a more accessible sweetener.

1

Preheat the oven to 350°F.

2

In a large bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt. Mix well with a fork.

3

Add Greek yogurt to the flour mixture and combine until it starts forming a dough. Adjust yogurt amount as needed, adding 2 additional heaping tablespoons if necessary.

4

Knead the dough until it is sticky but not sticking to your fingers. Let it rest for 5 to 10 minutes.

5

On a clean surface, sprinkle some flour and place the dough on it. Knead the dough further until it's not sticky and easy to work with. Form it into a ball and cut it into four pieces.

6

Roll each piece into a log shape and bring the ends together to form a bagel shape. Repeat for all pieces of dough.

7

Place the bagels on a baking tray lined with parchment paper (if available) and let them rest for another 5 minutes.

8

Prepare an egg wash by whisking 1 egg with 1 teaspoon of milk in a small bowl.

9

Brush the egg wash on the bagels to help toppings stick and add shine.

10

Sprinkle the homemade topping (sesame seeds, black garlic salt, and additional salt) on the bagels.

11

Bake the bagels in the preheated oven for 25 minutes or until fully cooked. Optionally, broil for an additional 5 minutes to brown the tops.

12

Let the bagels cool for at least 15 minutes before slicing.
