Mix the warm water, sugar and yeast and let it sit for about 5min until it becomes frothy.

In a large mixing bowl, combine the flour and salt. Then pour in yeast mixture and stir until a dough forms.

Knead for about 10 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl, cover it and let it rise in a warm place for about 45min or until it doubles in size.

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Once the dough has risen, punch it down and divide it into 6 equal portions.

Roll each portion into a ball, then use your thumb to poke a hole through the center. Gently stretch and shape the dough to form a bagel shape.

Place the shaped bagels on the prepared baking sheet, cover them and let them rise for another 30min in fridge.

In a large pot, bring water to a boil. Add baking soda and molasses.

Reduce the heat to a simmer, and carefully drop the bagels, one or two at a time, into the water. Boil for about 30 seconds on each side.

If you want to add toppings, like sesame seeds or poppy seeds, sprinkle them over the boiled bagels while they're still wet.

Transfer the boiled bagels back to the baking sheet and bake in the preheated oven for 20 minutes, or until they turn golden brown.
