In the bowl of a stand mixer, add 413 grams of bread flour, 8 grams of salt, 1/2 tsp of instant yeast, and 270 grams of lukewarm water.

Mix on medium-low speed until a dough forms, then increase to medium and knead for 5 minutes.

Transfer the dough to a lightly greased bowl and let it rest for 1.5 hours or until it has doubled in size.

Prepare an 18x12 inch baking sheet lined with parchment paper and dust with cornmeal.

Once the dough has doubled in size, divide it into 6 equal pieces.

Press out any air bubbles, then shape each piece into a smooth round and let rest for 15 minutes.

Shape the bagels using one of two methods: either roll out the dough into a log and form a ring, or poke a hole in the center and stretch it.

Transfer shaped bagels to the prepared baking sheet and cover to rest for 15 minutes or refrigerate overnight.

When ready to boil, fill a wide pot about 2/3rds full with water, add 2 tbsp of honey and 0.5-1 tbsp of salt, and bring to a boil.
