Today, it is a popular choice for gatherings, showcasing the comforting taste of baked apples and creamy cheesecake in a delightful combination.
In a bowl, mix 2 cups of graham cracker crumbs, 1 cup of quick oats, 1/3 cup of brown sugar, and 2/3 cup of melted butter until everything is moistened.
Press the mixture into the bottom and up the sides about 1 inch of a greased and parchment lined 9 inch spring form pan.
Place the crust into the fridge to chill while making the cheesecake layer.
In the bowl of a stand mixer with the paddle attachment, mix 3 packages (250 grams each) of softened cream cheese, 1 cup of brown sugar, and 3/4 cup of sour cream until smooth.
Add in 3 eggs one at a time, mixing after each addition. Crack eggs into a separate bowl first to avoid shells.
Scrape down the bottom and sides of the bowl a few times to ensure even mixing.
Mix in 2 teaspoons of cinnamon and 1/2 teaspoon of nutmeg to flavor the cheesecake layer.
Pour the cheesecake mixture into the chilled crust.
Place the pan onto a baking sheet to catch any leaks and for easier handling.
Bake in a preheated 325°F (160°C) oven for 45 minutes or until set with a little jiggle in the center.
In a sauce pot on medium heat, add 1 tablespoon of butter and 4 peeled, cored, and sliced apples.
Stir in 1 teaspoon of cinnamon, 1 tablespoon of brown sugar, 2 tablespoons of honey, and 1 tablespoon of cornstarch to coat the apples.
Turn the heat to low, cover, and cook until the apples are softened, about 10 minutes, stirring occasionally.
Remove from heat and allow to cool slightly.
In a bowl, crumble together 1/4 cup of quick oats, 1/4 cup of all-purpose flour, 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and 1/4 cup of melted butter until moistened.
Remove the mostly baked cheesecake from the oven and layer on the apple topping.
Sprinkle the crumble topping on top of the apples.
Return the cake to the oven to bake for another 15 to 20 minutes or until the crumble is toasted.
Let the cake cool completely and then chill before removing from the spring form pan and serving.
For best results, chill the cake overnight in the refrigerator.
