Vegetable Cutlet

2 cups mixed vegetables (carrots, peas, potatoes)
1/2 cup breadcrumbs
1/4 cup all-purpose flour
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp red chili powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped cilantro
1/2 cup water
Oil for frying

Boil the mixed vegetables until tender, then drain and let cool.

Mash the boiled vegetables in a large bowl.

Add breadcrumbs, all-purpose flour, cumin powder, coriander powder, garam masala, red chili powder, salt, black pepper, and chopped cilantro to the mashed vegetables.

Mix all the ingredients thoroughly until well combined.

Form the mixture into small patties or cutlets.

Heat oil in a pan over medium heat for frying.

Once the oil is hot, carefully place the cutlets in the pan.

Fry the cutlets until they are golden brown on both sides, about 3-4 minutes per side.

Remove the cutlets from the pan and place them on paper towels to drain excess oil.

Serve hot with chutney or sauce of your choice.
