1

Peel 4 russet potatoes and slice them into 4 or 5 pieces.

2

Wash the sliced potatoes in water until the water is clear.

3

Melt 50 g of unsalted butter in a saucepan until golden brown.

4

Add 30 g of flour to the butter and cook until it is a bit biscuity in color, about 1-2 minutes.

5

Gradually add 500 ml of beef stock to the roux, whisking until combined.

6

Season the gravy with salt and black pepper, 1 tablespoon of onion granules, 1 tablespoon of garlic granules, a pinch of paprika, and 2 tablespoons of apple cider vinegar.

7

Simmer the gravy for about 5-6 minutes until thickened.

8

In a separate pot, bring salted water to a boil and add the potatoes, par boiling for about 5 minutes.

9

After 5 minutes, turn off the heat and let the potatoes sit for another 5 minutes before draining.

10

Place the drained potatoes on a rack to dry, optionally refrigerating them for 20 minutes or overnight.

11

Heat neutral oil in a pot to 375°F and fry the potatoes in batches until golden brown.

12

Season the fries and place a few in a serving plate, followed by some cheese curds and a little gravy.

13

Add more fries on top, then finish with more cheese curds and pour gravy over the top.
