Remove the center of the cabbage and select about 750 g to chop finely.
Place the chopped cabbage in a pan, cover with water, and add a pinch of salt.
Cook the cabbage on the stove for about 10 minutes or until tender but firm.
Chop 2 medium onions finely, taking care to avoid tears.
Heat a splash of oil in a frying pan over medium heat and add the chopped onions.
Cook the onions, stirring constantly, until they start to brown.
Add 3 cloves of crushed garlic to the onions and cook until the onions are golden brown, then remove from heat.
Strain the cooked cabbage well to remove all water, using hands to squeeze out liquid.
In a large bowl, combine the drained cabbage and the cooked onions.
Add 2 eggs, salt to taste, black pepper, paprika, and 0.5 cup of flour to the mixture.
Mix well until all ingredients are integrated and achieve a homogeneous consistency.
Take portions of the mixture and place them in a pan with oil over low heat.
Cook the fritters slowly to ensure they brown well on both sides and acquire a golden color and crunchy texture.
Turn the fritters carefully while cooking to ensure even cooking.
Once ready, remove the fritters from heat.
Prepare the sauce by mixing 0.5 cup of plain Greek yogurt with 2 tablespoons of mayonnaise, 1 clove of chopped garlic, juice of half a lemon, salt to taste, and a little pepper until smooth and homogeneous.
