2 whole onions

Boil red chili peppers until ready.

Prepare a pot of water to boil the beef tripe and beef shank.

Add 2 heads of peeled garlic and 2 whole onions (cut a little opening) to the boiling water.

Boil for 45 minutes after the water starts boiling.

Cut one onion into halves and quarters for the red sauce.

Add 3-4 bay leaves and salt (to taste) to the pot.

Prepare the red sauce with half an onion, 3-4 garlic cloves, and oregano.

Add red chili peppers to the sauce.

Use 2 bags of baked red chili and one handful of chili beans for the sauce.

Once the meat is tender, add 3 cans of white hominy (without rinsing).

Add the red sauce to the pot and let it cook for 1 hour.
