5 lb honeycomb tripe

Clean and rinse the honeycomb tripe thoroughly.

Cut the tripe into 1 to 2 inch pieces.

Pour 3/4 cup of lime juice over the tripe and cover with water. Let it sit for at least 2 hours to remove the odor.

After 2 hours, rinse the tripe and beef feet again.

In a large pot, add 16 to 20 cups of water and set it on high heat.

Add salt, the whole onion, the whole garlic head, and the bay leaves to the pot.

Wait for the water to come to a boil.

Once boiling, add the tripe and beef feet to the pot.

Remove any foam that forms on top of the broth to reduce grease.

Reduce heat to medium and add 2 teaspoons of menudo seasoning (or oregano). Cover and let cook for 1.5 hours.

To make the chili sauce, remove seeds from the chilies and place them in a small pot filled with water. Bring to a boil.

Once boiling, turn off the heat and transfer the chilies to a blender.

Add 2 garlic cloves, 1 cup of pre-cooked hominy (rinsed), and 3 cups of the chili water to the blender. Blend until smooth.

Remove the onion and garlic from the pot, then pour the chili sauce into the pot.

Strain the sauce if necessary and mix well. Add about 1 cup of broth from the pot to the blender to get all the sauce out.

Add the rinsed hominy to the pot and mix. Taste for salt and adjust if needed.

Allow the menudo to cook for another 30 minutes.

Check the tripe and beef feet for tenderness; if tough, continue boiling until tender.

Serve the menudo with lime juice, chopped cilantro, chopped onion, and additional menudo seasoning if desired.
