Take the beef tripe out of the bag and cut it into smaller pieces.

Transfer the beef tripe into a larger pot and fill it with water.

Put the pot on the stove and let it cook for about 1 hour, then drain excess fat.

Make the chili paste while the tripe is cooking: remove seeds from 10 Chile guil and 6 Chile de arbol.

Peel one onion and cut off the ends.

Prepare 2 large garlic cloves by cutting off the ends and peeling them.

Heat a pan and roast the chiles for about 30 seconds, then add the onion and garlic.

Fill the pan with water just above the chiles, onion, and garlic and simmer for about 30 minutes.

Transfer the chiles, onion, and garlic into a blender with about 1 cup of the broth from the simmering mixture.

Add 2.5 teaspoons of cumin to the blender and blend until smooth.
