1 onion
1 whole garlic
2 bay leaves

beef tripe
beef shank
8 guajillo chiles
4 tablespoons chicken powder
2 tablespoons dry oregano
chopped onion (for garnish)

Start by adding 8 cups of water to a pot.

Add the entire onion to the water, then cut a bit off because it was too big.

Peel the garlic as much as possible and add it to the pot along with 2 bay leaves.

Add sea salt to taste.

Add the beef tripe and beef shank to the pot.

Transfer to a larger pot if the first one is too small.

While the meat is boiling, prepare the sauce by blending 8 previously boiled guajillo chiles after removing the seeds.

Add enough water to the blender to almost cover the chiles.

Blend the chiles with 4 tablespoons of chicken powder and 2 tablespoons of dry oregano.

Strain the blended mixture into the pot with the meat and water.

Let it boil for 3.5 to 4 hours, tasting occasionally to adjust saltiness or add more chicken or beef powder as needed.

Once done, garnish with chopped onion, dry oregano, chili flakes, and lime juice.
