Warm coconut milk in the microwave for 1 minute to about 110°F.
Combine 50 mL of warm coconut milk with 1 tablespoon of dry yeast and 1 tablespoon of sugar; mix and let sit for 10-15 minutes until foamy.
In a separate bowl, combine 300 g of bread flour, 1/2 teaspoon of salt, and 2 tablespoons of sugar.
Add the yeast mixture and the remaining coconut milk to the dry ingredients, then add 1 egg and mix together.
Knead the dough for about 2-3 minutes, then add 40 g of butter and knead for another 5 minutes until smooth.
Place the dough in a greased bowl, cover with plastic wrap, and let rise for 30 minutes to 1 hour until doubled in size.
Divide the dough into 4 equal pieces and shape each into a ball.
Roll each ball into a circle about 7 inches wide, brushing with melted butter before folding in half.
Place the folded dough on a baking tray lined with grease paper, cover, and let proof for another 20 minutes.
Bake in the oven at 320°F for 20-25 minutes until golden brown.
Brush with melted butter after baking.
