Whole wheat flour adds fiber and nutrients.

1

Start with 120 milliliters of coconut milk and add water to make a total of 240 milliliters of liquid.

2

Add 3 grams of active dry yeast and 25 grams of brown sugar to the liquid and mix until dissolved.

3

Add 2 grams of salt and mix again.

4

Add 240 grams of all-purpose flour, mixing thoroughly. This is called a preferment and can be left to ferment for 30 minutes to overnight in the fridge.

5

After fermenting, add another cup of flour and mix thoroughly with a spoon.

6

Once combined, use your hands to fold the dough over itself and press until smooth, kneading for about 8 to 10 minutes.

7

Add 40 grams of soft margarine and knead for an additional 4 to 5 minutes, adding more flour if the dough is too sticky.

8

Form the dough into a ball, cover with cling wrap or a damp paper towel, and let it rise for 20 to 35 minutes until about 70% bigger in size.

9

Flour your work surface and divide the dough into 6 equal pieces, each a little over 100 grams.

10

Shape each piece into a tight ball by folding it over onto itself and rolling it with your palm.

11

Line a baking tray with grease paper and brush it with margarine.

12

Roll out each dough ball to about half an inch thick, brushing generously with margarine after each roll.

13

Fold the dough over once and place it onto the baking tray, leaving space between each piece for the final rise.

14

Proof the dough in an oven set to 110 degrees Fahrenheit for 15 to 20 minutes.

15

Increase the oven temperature to 350 degrees Fahrenheit and spritz the dough with water to help with crust texture.

16

Bake for 20 minutes until golden brown and soft.

17

While still hot, brush generously with margarine or butter.
