Select ripe tomatoes and wash them thoroughly.
Prepare a clean jar and lid for preservation.
Slice tomatoes into quarters or halves, depending on size.
Layer tomatoes in the jar, sprinkling salt between layers.
Add garlic cloves, basil, oregano, and black pepper to the jar.
Pour olive oil over the tomatoes until fully submerged.
Add vinegar and lemon juice to enhance preservation.
Place bay leaves on top for flavor.
Seal the jar tightly and refrigerate or store in a cool, dark place.
Let the tomatoes marinate for at least 24 hours before use.
Use preserved tomatoes within a few weeks for best flavor.
