Instructions

  1. 1Drain the tuna and set aside.
  2. 2Chop the onion and garlic finely.
  3. 3Heat olive oil in a skillet over medium heat.
  4. 4Add the chopped onion and garlic; sauté until translucent, about 3-4 minutes.
  5. 5Stir in the chopped bell pepper and sauté for another 2-3 minutes.
  6. 6Add the aji amarillo paste and cook for 2 minutes until fragrant.
  7. 7Incorporate the diced tomato and cook until softened, about 3-4 minutes.
  8. 8Add the drained tuna and mix well, cooking for 2-3 minutes.

  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup cold water
  • 1/4 cup vegetable oil
  • 1 can (5 oz) tuna, drained
  • 1/2 cup cream cheese
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. 1In a mixing bowl, combine the flour and salt.
  2. 2Add the cold water and vegetable oil to the flour mixture and knead until a smooth dough forms.
  3. 3Cover the dough with a damp cloth and let it rest for 30 minutes.
  4. 4In another bowl, mix the drained tuna, cream cheese, green onions, garlic powder, and black pepper until well combined.
  5. 5Roll out the dough on a floured surface to about 1/8 inch thick.
  6. 6Cut the dough into rectangles, approximately 3x4 inches.
  7. 7Place a spoonful of the tuna mixture on one end of each rectangle.
  8. 8Fold the dough over the filling and seal the edges by pressing with a fork.
  9. 9Brush the tops with the beaten egg for a golden finish.
  10. 10Heat oil in a deep pan over medium heat and fry the tequeños until golden brown, about 3-4 minutes per side.
