White Chili

1 lb ground turkey
1 medium onion, chopped
2 cloves garlic, minced
2 cans (15 oz each) white beans, drained and rinsed
1 can (4 oz) diced green chilies
1 cup chicken broth
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
1 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro (for garnish)

In a large pot, heat a little oil over medium heat.

Add the chopped onion and minced garlic, sauté until the onion is translucent.

Add the ground turkey to the pot, cooking until browned and cooked through.

Stir in the white beans, diced green chilies, chicken broth, cumin, oregano, salt, black pepper, and cayenne pepper (if using).

Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.

Stir occasionally to prevent sticking and ensure even cooking.
