Soak navy pea beans overnight in a container covered with water.
Drain and rinse the soaked beans.
Put the soaked beans in a pan on the stove and power boil them for about 10 minutes.
In a bowl, mix together 1 cup white sugar, 1 tablespoon dry mustard, 1 teaspoon salt, 1 teaspoon black pepper, 1 tablespoon brown sugar, and 1 tablespoon molasses.
Drain the parboiled beans using a colander, saving the water.
Add about 1 cup of the saved bean water to the sugar mixture and stir until well combined.
Add the drained beans to the crockpot.
Add the sugar mixture to the crockpot with the beans.
Add 3 pieces of salt pork, burying them underneath the beans.
Ensure the beans are covered in liquid, adding about another half cup of bean water if necessary.
Cover the crockpot and cook on low for 8 hours, checking for doneness and adding more water if needed during cooking.
After 8 hours, check the beans; they should be done. Turn the crockpot to high for the last 3 hours if needed.
