Chocolate Hot Fudge Sauce

Chocolate hot fudge sauce has its roots in American dessert culture, often served as a decadent topping for ice cream sundaes. This rich, gooey sauce is a staple in diners and ice cream parlors across the United States, evoking nostalgia for many. Today, variations abound, with some incorporating different chocolates or flavorings, but the classic remains a beloved favorite.
Add 55 grams (4 tbsp.) of light brown sugar to a pan.
Add 117 grams (1/3 cup) of golden syrup to the pan. If you can't find golden syrup, you can substitute it with corn syrup.
Add 44 ml (3 tbsp.) of strong coffee (espresso) to the pan.
Add 2 grams (1 tsp.) of cinnamon to the pan.
Turn the stove onto medium-high and whisk the mixture.
Let the mixture come to a boil and stir regularly for 5 minutes.
While the mixture is boiling, chop 140 grams (5 oz.) of dark chocolate into fine pieces.
After 5 minutes, take the pan off the heat and add the chopped chocolate.
Whisk until all of the chocolate pieces have melted completely.
Add 70 grams (5 tbsp.) of double or heavy cream while whisking to prevent the chocolate from seizing up.
Pour the hot fudge sauce into a jar for storage or drizzle it over ice cream.
