16 oz Mild or Spicy Italian Sausage
2 cup Dry Penne Pasta
1- 14 oz can Diced Tomatoes
2 1/2 cups Freshly Grated Mozzarella
1 Yellow Onion chooped
1 teaspoon Dried Basil
1 teaspoon Dried Oregano
1 to 2 teaspoon Salt
1/2 teaspoon Black Pepper

Cook the dry penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the chopped yellow onion and sauté until translucent, about 5 minutes.

Add the chopped garlic and cook for an additional 1 minute until fragrant.

Add the Italian sausage to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.

Stir in the diced tomatoes (with juices), dried basil, dried oregano, salt, and black pepper. Bring to a simmer.

Reduce heat and let the sauce simmer for about 5 minutes, allowing it to thicken slightly.

Add the cooked penne pasta to the skillet and toss to combine with the sauce.

Stir in the freshly grated mozzarella until melted and well incorporated.
