75 grams peanuts
60 grams crunchy peanut butter
20 grams tomato puree
200 milliliters crushed tomatoes
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon dried coriander
1/4 teaspoon mild chili powder
1/4 teaspoon white pepper
1/2 teaspoon salt
handful fresh coriander for decoration

Heat 2 tablespoons of coconut oil in a large hob-proof casserole dish.

Sauté 1 medium finely chopped onion and 1 red bell pepper for about 10 minutes until the onion is translucent.

Roughly chop 1 medium red chili (seeds can be left in for extra spice) and add to the pot.

Add 4 cloves of roughly chopped garlic and a 1-inch chunk of roughly chopped ginger, along with 20 grams of tomato puree; stir to combine and cook for a couple of minutes.

Add spices: 1 teaspoon paprika, 1/2 teaspoon cumin, 1/2 teaspoon dried coriander, 1/4 teaspoon mild chili powder, 1/4 teaspoon white pepper, and 1/2 teaspoon salt; mix well.

Stir in 200 milliliters of crushed tomatoes and 1 liter of vegetable stock; bring to a boil.

Once boiling, reduce heat to a light simmer and add 400 grams of chopped sweet potatoes; simmer for 45 minutes.

After 45 minutes, stir in 75 grams of peanuts and 60 grams of crunchy peanut butter; mix until the peanut butter is evenly distributed.

Cover with a lid and simmer on low heat for another 45 minutes before serving.
