Chop up onions and add them to the mixing bowl.

Add 3 Scotch Bonnet peppers to the bowl.

Add dried oregano, paprika, salt, and white pepper to the bowl.

Squeeze lemon juice into the marinade and mix everything well.

Preheat the oven to 210°C (410°F).

Marinate the chicken by applying the marinade all over, including inside the cavity.

Stab the chicken to help the marinade penetrate.

Let the chicken marinate for about an hour, or stab it if short on time.

Prepare the potatoes by cutting them into chunks and adding garlic, salt, pepper, and olive oil.

Add rosemary to the potatoes and mix everything together.

Place the marinated chicken in the oven and roast for about an hour and a half, checking for doneness based on the size of the chicken.
