Greek Yoghurt

Cultural Context

Greek yoghurt has its roots in the Mediterranean, where it has been enjoyed for centuries as a staple food. Traditionally made from sheep's milk, it is celebrated for its creamy texture and high protein content. Today, Greek yoghurt is popular worldwide, often used in both savory and sweet dishes, and has inspired numerous variations, including flavored and low-fat options.

1

Measure out 3 kg of distilled water using four small bottles.

2

Add 800 g of skimmed milk powder to the water.

3

Mix the water and milk powder together until well combined.

4

Transfer the mixture to a nonstick pot.

5

Heat the mixture on the stove, stirring gently until it passes the finger test (can withstand heat for 5 seconds).

6

Once heated, remove from heat and strain the mixture to eliminate lumps or bubbles.

7

Cover the strained mixture to prevent a skin from forming as it cools down.

8

Thin out the starter yogurt with a few cups of milk until smooth.

9

Pour the thinned starter yogurt into the cooled milk mixture and stir well to combine.

10

Cover the mixture with a warm cloth to retain heat for fermentation.

11

Wrap the container in a nylon bag and place it in a cooler for 14 hours to ferment.

12

After 14 hours, check the yogurt for warmth and texture.
