Sourdough Bread

Cultural Context

Sourdough bread has a rich history, believed to have originated in ancient Egypt. It is made through a natural fermentation process using wild yeast and bacteria, giving it a distinctive tangy flavor. This method of bread-making has gained popularity in recent years, particularly among home bakers seeking to create artisanal loaves. Sourdough is often celebrated for its crusty exterior and chewy interior, making it a versatile bread for sandwiches or as an accompaniment to meals.

1

In a bowl, combine 1 cup of white flour and 1 cup of whole wheat flour.

2

Add yeast to the flour mixture.

3

Pour in 1 cup of warm milk and 1 cup of warm water.

4

Add 3/4 cup of bubbly sourdough starter to the mixture and stir well.

5

Let the mixture set for 1.5 hours until bubbly.

6

After 1.5 hours, add 3 tablespoons of softened butter, 1/4 cup of honey, 1 tablespoon of salt, and 1 teaspoon of baking soda to the mixture and mix together.

7

Add enough additional white flour to create a stiff dough, adding 1 more cup of white flour and kneading until well combined.

Once risen, punch down the dough, divide it in half, and place in loaf pans to rise again.

Preheat the oven to 350°F.

11

Bake the loaves for 30 minutes once the oven is heated.

12

After baking, brush the loaves with a little butter and let cool.
