Take sourdough starter out of the fridge and feed it with 1/4 cup filtered water and 1/2 cup whole wheat flour, let it sit overnight.

Add 120 grams of sourdough starter to a large bowl.

Pour in 1 1/3 cups of warm water (90 degrees) and stir until mostly combined.

Add 500 grams of bread flour and 2 teaspoons of fine sea salt to the mixture.

Mix until a shaggy dough forms, do not fully combine.

Cover the dough with a damp kitchen towel and let it rest for 1 hour.

Wet your fingers and perform four folds of the dough, turning the bowl 90 degrees each time.

Cover the dough again with a damp towel and let it rest for 20 minutes.

Repeat the stretch and fold process two to four times, with 20 minutes resting in between each.

Shape the dough into a ball and let it rise.
